Join our pastry team led by Melissa Carroll, a St. Louis native and Austin Chronicle nominated Pastry Chef. She graduated with honors from the French Culinary Institute in California, worked her way through the culinary and fine art industries in her hometown, and later moved to Austin to be part of the opening pastry team at South Congress Hotel, led by James Beard nominated Pastry Chef Amanda Rockman. After two years, she transferred to open New Waterloo's sister restaurant, Le Politique Brasserie and Patisserie as Executive Pastry Chef. One of her greatest joys is working closely with her team to create a nurturing environment for her staff to grow in pastry knowledge, friendship, and work-ethic. We are currently seeking one full time Pastry Cook at Le Politique to fill our AM Baker position. Our ideal candidate has extensive experience working with laminated doughs, feels confident thinking on their feet, and is a skilled multi-tasker. This position is responsible for baking all pastries for our adjoining patisserie, as well as producing all laminated pastries from start to finish. We are looking to fill 4 shifts per week, 4am-2pm. Le Politique is a French brasserie, patisserie and coffee shop in downtown Austin. Located in Austin’s Green Water Redevelopment, Le Politique serves lunch, brunch and dinner in a relaxed yet bustling 9,000-square-foot restaurant that features a spacious indoor dining room, large bar & lounge, and 2,400-square-feet of wraparound patio seating lining the corner of 2nd and San Antonio. A traditional brasserie, Le Politique offers a menu of classic French fare, including trout amandine, escargot, and an extensive raw bar of oysters, clams and lobster.
